The Chef de Cuisine (Thai) is responsible for leading the Thai kitchen operations, ensuring the highest quality of authentic Thai cuisine, and delivering exceptional dining experiences that reflect Dusits rich heritage of hospitality.
Key Responsibilities
Culinary Leadership
Plan, create, and execute authentic Thai menus with a balance of tradition and innovation.
Supervise and lead the Thai kitchen brigade, ensuring efficiency and teamwork.
Train, mentor, and develop junior chefs to enhance culinary skills and maintain standards.
Operational Excellence
Ensure consistent food quality, taste, and presentation in line with Dusit standards.
Control food costs and maintain inventory in line with budgetary requirements.
Ensure compliance with hygiene, health, and safety standards (HACCP).
Guest Experience
Engage with guests when necessary to promote Thai cuisine and gather feedback.
Requirements
Minimum 5 years of culinary experience, with at least 2 years in a leadership role as Sous Chef or Chef de Cuisine, specializing in Thai cuisine.
Deep knowledge of authentic Thai recipes, ingredients, and culinary traditions.
Strong leadership, communication, and organizational skills.
Creative mindset with the ability to balance innovation and tradition.
Fluency in English (spoken & written); .
