Job Description

Responsible for supporting the Food & Beverage Manager/Senior Food & Beverage Manager in overseeing daily F&B operations, ensuring exceptional guest experiences, operational efficiency, and compliance with company standards. This role assists in developing business strategies, driving revenue growth, controlling costs, maintaining service quality, developing team members, and fostering a positive work environment while ensuring the achievement of departmental goals and guest satisfaction.

  • Anticipates guest's needs through observation and offers, efficient service either personally or through other associates.
  • Personally, ensures compliance with all relevant Workplace Health & Safety and Occupational Health & Safety legislation, and related TGHT's Policies.
  • Develops and implements Food and Beverage promotions, strategies and special events in conjunction with the Outlet Chefs and the Director of Sales and Marketing.
  • Coordinate the upkeep and cleanliness of outlets by liaising with Housekeeping and Maintenance.
  • Liaise with Outlet Chefs on menu engineering and portion control, ensuring highest food standards and proper selling prices.
  • Maintain all equipment within the outlets e.g. Menus, linen, chinaware, glass, electrical equipment and Point of Sale system.
  • Responsible for checking of all stock, requisitions and equipment on a regular basis.
  • Drive corporate or Hotel specific programs that affect guest satisfaction and profitability in the outlets (e.g. VIP Gaming Guests).
  • Implement control procedures to minimize errors, fraud and waste.
  • Ensure that the property is seen as being the principal innovator in the marketplace.
  • Coordinate Hotel wine lists, offering choice and variety as well as price consistency throughout the Outlets.
  • Handle Food and Beverage complaints in a timely and effective manner.
  • Ensure correct liquor licensing laws are abided by, paying particular attention to intoxicated guests and underage guests.
  • Conduct development and performance reviews, identifying key personnel for further development and structured career path.
  • Implement and maintain training systems to ensure that associates have the necessary framework and skills to perform their job efficiently and effectively.
  • Prepare work schedules and annual leave schedules within budget, business expectations and guidelines of the appropriate industrial legislation.
  • Implement opportunities for quality Team Building.
  • Ensure that all associates comply with the grooming and uniform standards.
  • Oversee the selection and appointment of new associates within the department.
  • Conduct regular associate meetings to keep all associates informed.
  • Actively promote a work environment, which cares for guests and associates alike.
