Job Purpose
The Head of Production Management is responsible for overseeing and managing all production operations at the central kitchen/manufacturing facility to ensure products meet quality standards, food safety requirements, delivery timelines, and cost optimization objectives in support of the restaurant chain operations.
Key Responsibilities1. Production Operations Management
- Develop and execute production plans based on operational demands from the restaurant system.
- Coordinate manpower, machinery, and raw materials to ensure efficient production flow.
- Ensure full compliance with food safety and hygiene standards, including HACCP and ISO regulations.
2. Quality Control & Process Improvement
- Establish, implement, and maintain SOPs (Standard Operating Procedures) across all production processes.
- Collaborate with QC/QA teams to resolve quality-related issues and maintain product consistency.
- Propose and implement process improvements to enhance productivity and minimize waste.
3. Team Management
- Lead recruitment, training, coaching, and performance evaluation for production staff.
- Build KPIs and development plans to strengthen team capabilities and operational performance.
4. Reporting & Cross-functional Coordination
- Prepare periodic operational reports for the Board of Management.
- Work closely with warehouse, purchasing, and restaurant operations teams to ensure on-time delivery and smooth supply chain coordination.
Requirements
- Bachelor's degree or College diploma in Production Management, Food Technology, Manufacturing, or related fields.
- Minimum 3–5 years of experience in F&B manufacturing/production, including at least 2 years in a managerial position.
- Strong understanding of food safety standards and chain production systems.
- Excellent leadership, organizational, and problem-solving skills.
