Summary
We are seeking an exceptional Vietnamese/Asian Chef to join our team and help elevate our culinary offerings.
The ideal candidate specializes in high-heat, wok-based cooking, with a focus on planning, preparing, and executing a variety of Vietnamese menus and Asian dishes with speed, precision, and consistency.
Assisting in ensuring that all culinary activities are aligned with the overall Corporate Strategy and that corresponding hotel-level initiatives are implemented where applicable.
Planning, prepping, and executing traditional Vietnamese regional and Southeast Asian cuisine using authentic techniques, ensuring exceptional food quality.
- Managing food and labor costs, and ordering food supplies based on seasonal business requirements.
- Monitoring and tasting the quality of dishes at all stages of preparation and presentation.
- Communicating, training, and demonstrating techniques to both kitchen and front-of-house staff, and advising on cooking procedures to fit the restaurant's concept.
- Responsible for teamwork and collaboration with other hotel kitchens, including banquet, MICE, and event operations.
- Filling in where needed to ensure guest service standards and efficient operations for Park Hyatt.
- Must be able to handle high-volume production and manage a large team during breakfast, lunch, and dinner rushes.
- Collaborating with restaurant management to develop marketing strategies and promotions.
- Maintains a positive attitude and works well with others teamwork and cooperation are essential.
- Completes all opening and closing duties as assigned for the restaurant.
Qualifications
Minimum requirements
- 3+ years of experience as a Chef de Cuisine in a top-level Vietnamese, Asian, or Chinese restaurant; experience in an international 5-star hotel is a plus.
- Experience in fast-paced, reputable kitchens and a strong work ethic.
- Advanced wok experience and knife-handling skills (saut, fry, steam, and soups); strong knowledge of Asian ingredients and sauces.
- Ability to understand both written and spoken English and Vietnamese. Knowledge of other Asian languages and cooking skills would be a plus.
- Knowledge of Chinese and Cantonese cuisine would be a plus.
- The role requires the Chef de Cuisine to stay up to date with industry trends and maintain a clean and organized kitchen.
